Crispy Chicken with Creamy Italian Sauce and Bowtie Pasta

I made this dish for our anniversary dinner and paired it with a Caesar salad.  THIS WAS DELICIOUS!!! My husband and I LOVED IT!! We will be making this dish again and again!
Ingredients:
3 large chicken breasts
5 cups corn flakes
3/4 cups  flour
1/2 tsp salt
1/2 cup  milk
6 TBSP olive oil
1 12 oz package bowtie noodles

Sauce:

1 10 oz container Philadelphia Cooking Cream (Italian Cheese and Herb Flavor)
2 cans cream of chicken soup
1 cup chicken broth
1/2 cup milk
fresh parsley, chopped

Directions:

In a small food processor crush the corn flakes into crumbs.
Add the 1/2 tsp salt to the 3/4 cup flour.

Stir to combine.
Place the flour, milk and crushed cornflakes each into their own separate pan. 

Place your chicken breasts in a gallon sized Ziploc bag and seal the top.
Pound the chicken flat with a meat mallet. 
Take a pair of sharp kitchen scissors and cut each breast in half.
Dredge the chicken in the flour. Be sure it gets covered on both sides.
Lay the floured chicken onto a small cookie sheet and slide the sheet into the freezer for about 5 minutes.

Start cooking your pasta.

Remove the chicken from the freezer and dredge each piece in the milk and then immediately into the corn flake crumbs. Again, be sure both sides are covered well.
Add the olive oil to a hot skillet.
Carefully lay each chicken piece into the hot oil.

Sprinkle with a little bit of salt and pepper.

Cook over medium high heat for about 5 minutes or until the underside of each piece is nice and golden brown. Turn the pieces over. If the bottom of the pan is dry add just a bit more olive oil to the side of the pan. Swirl the pan around a bit to let the oil flow to all sides.

Cover the pan and reduce the heat to medium. Let the chicken cook for about 7 more minutes, being careful not to burn the bottoms. 

When your chicken has been cooked through remove it from the pan and place it on a plate. Cover with tin foil.
Into the same pan pour your broth, Philly Cooking Creme, Cream of Chicken and milk.
Whisk the sauce around and let it get all warm and bubbly. Should only take about 3 minutes.

Slice your chicken into strips and serve over your cooked pasta and sauce.
Garnish with chopped parsley if you choose.

Pumpkin Spice Fudge

This just might be my favorite fudge of all time!! I made it this past weekend and it was amazing!! It is perfect for FALL!

Ingredients:

2 cup sugar

1 cup brown sugar, packed
3/4 cup butter (no substitutions)
2/3 cup evaporated milk
1/2 cup pumpkin puree
1 1/2 tsp Pumpkin Pie Spice
1 (12 oz.) pkg. white chocolate chips
1 (7 oz.) jar Marshmallow creme
1 cup chopped pecans or macadamia nuts (optional)
1 1/2 tsp. vanilla extract

Directions:

Butter a 9 x 13 baking dish. 

Combine the first 6 ingredients in a heavy saucepan

Cook over medium heat until the sugars dissolve, then continue cooking until the mixture begins to boil, stirring constantly. 

Boil until a candy thermometer reaches the the soft-ball stage (234 -243 degrees).  The total boiling time will be about 30 minutes. 

Remove from heat, stir in the white chips until they are all melted and mixture is smooth.
Add the remaining ingredients, mix well.
Pour into prepared pan, and cool to room temperature.
Cut into squares, store refrigerated in an air tight container.

Chocolate Chip Cookie Pie

OH.MY.GOODNESS.GRACIOUS!! Talk about heaven in your mouth!! This is a must try!!! I could eat one of these pies a week!! HA!

Ingredients:

1 unbaked 9-inch graham cracker crust or deep-dish pie crust
2 large eggs
1/2 cup all-purpose flour
1/2 cup sugar
1/2 cup packed brown sugar
3/4 cup (1 1/2 sticks) butter, softened
1 cup chocolate chips 
1 cup chopped nuts (optional)
ice cream (recommended!)

Directions:

Preheat oven to 325 degrees

Beat eggs for about a minute, then add flour and sugars. Beat well.

Add butter, beat, then stir in chocolate chips and nuts (if including).

Spoon mixture into unbaked pie crust.

Bake pie in oven on cookie sheet for approximately 55 minutes, or until knife inserted halfway from edge comes out clean.

Cool on wire rack completely, or until slightly warm.

Top with ice cream and serve!

Bacon, Double-Cheese, and Onion Stuffed Burgers

These burgers are AMAZING! My husband said that this is quite possibly one of the best burgers he has ever had. 

Ingredients:
4 slices of Oscar Mayer Bacon
1 Onion
1/2 cup Shredded Triple Cheddar Cheese
1 lb. ground beef
4 cheese slices
Hamburger Buns

Directions:
Cook bacon in a small skillet until crisp. 

Meanwhile finely chop onion.

Remove bacon from skillet, reserving 1 TBSP drippings in skillet.

Drain bacon on paper towels.

Add chopped onions to drippings.

Cook on medium heat 5-6 minutes or until golden brown, stirring frequently

Remove from heat

Crumble bacon; mix with cooked onion and cheese. 

Shape meat into 8 thin patties. 

Top 4 patties with bacon mixture

Cover with remaining patties and pinch edges together to seal.

Cook on each side until meat is done.  Top with cheese slices.

Cake Batter Rice Crispy Treats

OH MY!! I made these and within 24 hour they were GONE!  Talk about addicting!


Ingredients:
3 TBSP butter
1 (10 oz.) bag of mini-marshmallows
1/3 cup yellow cake mix
6 cups crispy rice cereal
1 (1.75 oz.) container of sprinkles

Directions:

Melt butter in a large saucepan over low heat and add marshmallows.

Stir until they begin to melt, adding in cake mix one spoonful at a time so its combined.

Stir in cereal so it is completely coated with marshmallow mixture.

Sprinkle in half of the sprinkles and mix.

Press into a baking dish (any size will do) and top with remaining sprinkles.

Let sit for about 30 minutes before cutting.

Dorito Casserole

Okay! I am not even going to pretend that this is good for you, but I will say that it is delicious!! The picture does not do this dish justice!! If you have a love for cheese and Doritos you will love this dish!


Ingredients:
2 cup shredded cooked chicken
1 cup shredded cheese (or more if you love cheese)
1 can cream of chicken soup
1/2 cup milk
1/2 cup sour cream
1 can Ro-tel tomatoes 
1/2 packet taco seasoning (or more- to taste)
Bag of Doritos

Directions:

Preheat oven to 350 degrees.

In a mixing bowl, combine all ingredients except Doritos.

In a greased 2 qt baking dish, put a layer of crushed Doritos (about 2 cups), then a layer of the chicken mixture.

Repeat once more, ending with a layer of chicken mixture.

Top with more shredded cheese, cover, and bake for 30-35 minutes, till bubbling hot.

Crock Pot Hot Fudge Cake

This cake is so easy to make, and sooooo good. It is like cake on the top and a fudge pudding on the bottom.  I failed to get a picture of this yummy cake! I would recommend serving with a scoop of vanilla ice cream.  Make this cake and you will be in the chocolate heaven!!

Ingredients:

1 cup all-purpose flour
1/2 cup sugar
2 tsp baking cocoa
2 tsp baking powder
1/2 tsp salt
1/2 cup milk
2 TBSP vegetable oil
1 tsp vanilla
1/2 cup chopped nuts
3/4 cup packed brown sugar
1/4 cup baking cocoa
1 1/2 cups hot water

Directions:

Spray inside of 2- to 3 1/2-quart slow cooker with cooking spray.

Mix flour, granulated sugar, 2 tablespoons cocoa, the baking powder and salt in medium bowl.

Stir in milk, oil and vanilla until smooth. Stir in nuts.

Spread batter evenly in slow cooker.

Mix brown sugar and 1/4 cup cocoa in small bowl.

Stir in hot water until smooth.

Pour evenly over batter in slow cooker.

Cover and cook on high heat setting 2 hours to 2 hours 30 minutes or until toothpick inserted in center comes out clean.

Turn off slow cooker.

Let cake stand uncovered 30 to 40 minutes to cool slightly before serving.

Spoon sauce over top.

Homemade Olive Garden Breadsticks

Of Course, I forgot to get a picture of these delicious breadsticks that taste ALOT like Olive Garden Breadsticks,  And who doesn't love Olive Garden breadsticks!! Give these a try!



Ingredients:
1 1/2 cups warm water (between 110 - 120 degrees F)
1 package active dry yeast

4 1/4 cups all-purpose flour
2 TBSP unsalted butter, melted
2 TBSP sugar
1 TBSP salt

Directions:

In a large bowl, dissolve sugar and yeast in warm water and allow to sit for 10 minutes, covered. Mixture should be frothy.

In separate bowl, combine flour and salt.

Add to yeast mixture.

Add melted butter.

Mix with paddle attachment of stand mixer or wooden spoon until fully combined

Knead dough for a few minutes just until dough is smooth. Do not over knead!

Grease a cookie sheet. Pull off pieces of dough and roll out into strips. 

Cover the dough and let sit in a warm place for 45 minutes to an hour.

Preheat your oven to 400 degrees


Once heated, pop in the bread sticks.

In microwave, combine the following:

1 stick unsalted butter (or 1/2 cup margarine)
2 tsp garlic powder
2 tsp salt

After 6 or 7 minutes in oven, brush the bread sticks with half the butter mixture.

Continue to bake another 6 to 7 minutes or until light golden brown.

Immediately upon removal from the oven brush the other half of the butter on the sticks

Allow them to cool for a minute or two

Baked Parmesan Spaghetti

I LOVED Baked Spaghetti!! I found this recipe and I thought that I would give it a try.  It turned out REALLY good!! I will definitely be making this one more often!!

Ingredients:


3/4 pound whole wheat spaghetti
1/2 onion, chopped
3 cloves garlic, minced
1 TBSP olive oil
1 1/4 pounds ground beef
1 tsp salt
1 tsp pepper
1 tsp basil 
2 cups of your favorite pasta sauce
1 cup shredded mozzarella cheese
1/2 cup freshly grated Parmesan cheese

Directions:

Preheat oven to 350 degrees.

Prep water to boil for pasta.

Heat a skillet on medium heat and add olive oil.

Add onions with a sprinkle of salt and pepper and saute until soft, about 5-6 minutes.

Add garlic and stir for another minute.

Season ground beef with the teaspoon of salt and pepper and add to skillet.

Stir in one cup of pasta sauce and basil.

Mix to combine.

Spray a 9×13 baking dish (or baking dish of your choice, I used an round deep dish) with non-stick spray.

Add half of the spaghetti mixture to the dish, then top with 1/2 cup tomato sauce and half of each cheese.

Add the remaining spaghetti and top with the rest of the sauce and cheese.

Bake for 20 minutes, or until cheese is golden brown and bubbly.

Crisp and Creamy Baked Chicken

Love this chicken and it was a super quick and easy dinner to make.  My whole family loved it!

Ingredients:

4 small boneless skinless chicken breast halves (1 lb.)
6 TBSP (1/2 of 1 pouch) Shake 'N Bake Extra Crispy Seasoned Coating Mix
2 cups instant white rice, uncooked
2/3 cup (1/2 of 10-3/4-oz. can) condensed cream of celery soup
1/4 cupmilk
1 cup KRAFT Shredded Three Cheese with a Touch of PHILADELPHIA

Directions:

Heat oven to 400 degrees

Coat chicken with coating mix as directed on package

Place in 13x9-inch baking dish sprayed with cooking spray. Discard any remaining coating mix.    

Bake 20 minutes or until chicken is done

Meanwhile, cook rice as directed on package.    

Mix soup and milk until well blended

Pour over chicken and top with cheese. 

Bake 5 minutes or until cheese is melted and sauce is bubbly. 

Serve with rice.

Crockpot Chicken and Dumplings

I LOVE these Chicken and Dumplings and they are soooo easy to fix!! Perfect comfort food on a chilly day!

 
Ingredients:

4-6 boneless skinless chicken breasts ( I used 4)
2 TBSP butter
2 cans cream of chicken soup
1 can chicken broth
1 onion diced
1 TBSP dried parsley
1 package of Grands flaky refrigerator biscuits

Directions:

Place chicken in the crock pot

Add the butter, cream of chicken, broth, onions and parsley.


Cook on high for 4-6 hours

After the cooking time has elapsed, I took the chicken out and shredded the chicken on a plate and returned the chicken to the crock pot.

Cut each biscuit into 9 pieces. 

Place biscuits in the crock pot and stir into chicken. 

Continue cooking for approx. 45 minutes or until biscuits are cooked through.

Add more chicken broth if necessary!

Fruit Granola Parfait


 
This is such a yummy and healthy snack!! I love it!

Ingredients:
2 container (6 oz each) non fat or low fat vanilla or banana flavored yogurt
Dash of ground cinnamon or nutmeg
Granola
Tropical Fruit or fruit of your choice

Directions:

Stir together yogurt and cinnamon in small bowl

Layer yogurt and mixture with fruit and granola
