Crockpot Italian Chicken

This is a super easy dish to make and it is delicious! My whole family loved it!! We will be having this more often!

Ingredients:

4 chicken breasts
1- 1 1/2 packet dry Zesty Italian dressing 
1 (8 oz) package cream cheese, softened
2 cans cream of chicken soup 

Directions:

Place the chicken in a crockpot and sprinkle Italian dressing over it.

Combine cream cheese and cream of chicken soup in a small pot over low heat and pour over chicken.

Cook on low in the crockpot for at least 4 hours. You can leave it in there all day.

Once chicken is done, shred the chicken and throw it back in the crockpot and stir into the sauce.

Serve over pasta.

Taco Ring

This is super easy and so yummy!!

Ingredients:

1 lb. ground beef
1 package taco seasoning mix
1 cup or more shredded cheddar cheese
2 TBSP water
2 8-oz packages refrigerated crescent rolls

Shredded lettuce
1 large tomato, diced

1 medium onion, chopped
olives (optional)
sour cream (optional)
salsa (optional)


Directions:

Preheat oven to 375 degrees

Brown the ground beef, then drain. Add taco season and simmer

Unroll the crescent dough; separate into triangles.

Arrange triangles in a circle on a pizza pan with the wide ends toward the center of the pan, overlapping each other. It will look like a large sun with the points hanging half off the pan.

There should be an opening in the center. Spoon the meat mixture evenly onto widest end of each triangle. Bring points of triangles up over filling and tuck under wide ends of dough. (Filling will not be completely covered).

Bake 10-12 minutes or so until golden brown. 

Arrange lettuce, onions, tomatoes, cheese, and olives in the middle of the taco ring.

Crock Pot Buffalo Chicken Sandwiches

I made these on Thursday and boy did they have my mouth watering ALL DAY LONG!! They were delicious and SUPER easy! I came across this recipe on Pinterest and I thought that I would share them with you! I have several recipes I am going to try and I will post them on here so you can try them out too!! If you are not on Pinterest you are missing out!!

 Ingredients:
4 skinless and boneless chicken breasts
1 (17.5 oz) bottle buffalo wing sauce ( I used Sweet Baby Ray's Buffalo Wing Sauce)
1/2 of a 1 oz. pkg of dry ranch salad dressing mix
6 sandwich or hoagie rolls

Directions:
Put the chicken in the crock pot.

Pour 3/4 of the bottle of the hot sauce over the top of the chicken and then sprinkle the salad dressing mix over that.

Cover and cook on LOW for 6-7 hours.

Once the chicken has cooked, shred it right in the crock pot and let it continue to cook for a few minutes to soak up the sauce.

Pile chicken onto rolls and splash with some of the remaining wing sauce if desired.

Cover with provolone cheese and stick under the broiler until the cheese melts.

S'more Cups

I got this off Pinterest as well!! They were also super easy to make and so YUMMY!! Taste just like a big S'MORE!! YUM! A must try!

Ingredients:

1 cup finely crushed graham crackers ( I used the graham cracker crumbs)
1/4 cup powdered sugar
6 TBSP butter, melted
4 bars (1.55 oz each) milk chocolate candy, divided
12 large marshmallows


Directions:
Preheat oven to 350 degrees

Combine graham cracker crumbs, powdered sugar, and butter in a small bowl.

Place 1 tablespoon of crumb mixture in each cup of a mini muffin pan.

Press crumbs to form shallow cups.

Bake 4-5 minutes or until edges are bubbling.

Meanwhile, break two of the candy bars into rectangles.

Remove pan from oven; place one rectangle into each cup.
Cut marshmallows in half crosswise using shears dipped in cold water.

Place one marshmallow half, cut-side down, into each cup.

Return to oven 1-2 minutes or until marshmallows are slightly softened.

Remove pans from oven to cooling rack; cool 15 minutes. Carefully remove cups from pan. Cool completely.

Break remaining candy bars and place in small microwavable bowl.

Microwave on high 1 to 1 1/2 minutes or until melted and smooth, stirring every 20 seconds.

Dip the top of each marshmallow in melted chocolate. Turn top-side up and let stand 40 to 60 minutes or until set.

Makes approx. 24 cups.

Cake Batter Pancakes!

I made these for my birthday boy and he loved them!! I think that this will be a new tradition in our home!! Kids will love them and so will you if you love cake batter as much as I do!!

I had to share a picture of my happy little man enjoying his birthday pancakes!



Ingredients:

1 1/2 cups all purpose flour
2/3 cup yellow cake mix
1 TBSP sugar
3/4 tsp baking powder
pinch of salt
2 eggs
1 tsp on vanilla extract
1-2 cups milk
assorted sprinkles

Directions:
Combine flour, cake mix, baking powder, sugar and salt in a bowl and mix.
Add 1 cup of milk, egg and vanilla extract and stir until smooth.

You want the batter to look like regular pancake batter; not too thin, not too thick. 

Start with 1 cup of milk and add more if needed.

Preheat a skillet on medium heat.

Fold desired amount of sprinkles into batter.

Pour batter in 1/4 cup measurements onto skillet and let cook until bubbles form on top, about 2-3 minutes.

Flip and cook for at least 2 minutes more.

Serve with vanilla glaze.

Sour Cream Chicken

This chicken was so delicious and it was so easy to put together at the last minute.  I laid out a few chicken breasts one night and I had NO IDEA what I wanted to do with them.  This is a quick and easy meal that is quick to clean up! Perfect!
Ingredients:


2 pounds chicken breasts
1 1/2 cups of Pepperidge Farm Herbed Stuffing, the crumbles not the cubes 
1 cup (approximately) of full fat sour cream
salt
ground pepper
garlic powder
1/2 cup unsalted butter, cubed

Directions:

Preheat oven to 375 degrees.

Lay the chicken close together on a foil lined baking sheet.

Sprinkle with salt, pepper and garlic powder.

Coat with a thick layer of sour cream.

Top that with the seasoned Pepperidge Farm breadcrumbs and then place the small cubes of butter all over the chicken.
Bake for 45 mintues to an hour for chicken breasts until chicken is well done and crumbs or lightly brown.

Ham and Cheese Sliders

I made these simple ham and cheese sliders for my son's birthday party as well and they were a hit! They were delicious and everyone loved them.  They were so easy to put together and they make the perfect appetizer or dish for a family gathering!

Ingredients:

24 good white dinner rolls (I used Sara Lee dinner rolls)
24 pieces good honey ham
24 small slices Swiss cheese
1/3 cup mayonnaise
1/3 cup miracle whip


Poppy seed sauce
1 TBSP poppyseeds
1 1/2 TBSP yellow mustard
1/2 cup butter, melted
1 TBSP minced onion
1/2 tsp Worcestershire sauce

Directions:

In a small bowl, mix together mayonnaise and miracle whip.
Place a slice of ham and a slice of Swiss inside of each roll.
Close rolls and place them into a large baking dish or heavy cookie sheet. Place very close together.
In a medium bowl, whisk together all of the poppy seed sauce ingredients.
Pour evenly over all of the sandwiches and let sit 10 minutes or until butter sets slightly.
Cover with foil and bake at 350 degrees for 12-15 minutes or until cheese is melted.
Uncover and cook for 2 additional minutes. Serve warm.

Crock pot BBQ Meatballs

I make these crock pot BBQ Meatballs all the time! I made them for the party as well, but I completely forgot to get a picture of them!  I thought that I would share them anyway! I gave the entire recipe but I will let you in on a little secret.  I use to make the meatballs from scratch  but I found that the frozen meatballs from Wal-mart work much better.  The homemade one tend to fall apart as they cook in the crock pot.  So I buy the frozen meatballs and put them in the crock pot frozen and add the sauce....EASY and DELICIOUS!

Ingredients:

Meatballs:

2 lbs. lean ground beef
1/3 cup ketchup, divided
3 TBSP seasoned dry bread crumbs
1 egg, slightly beaten
2 TBSP dried instant minced onion
3/4 tsp garlic powder
1/2 tsp black pepper
1/4 tsp salt

Sauce:

1 cup ketchup
1 cup packed brown sugar
1 can (6 oz) tomato paste
1/4 cup reduced-sodium soy sauce
1/4 cup cider vinegar

Directions:

Preheat oven to 350 degrees.
In a large bowl, combine ground beef, 1/3 cup ketchup, bread crumbs, egg, dried minced onion, garlic powder, black pepper, and salt.
With hands or wooden spoon, mix lightly but thoroughly; shape into 1-inch meatballs.
Place meatballs in two 15 x 10-inch jelly-roll pans or shallow roasting pans.
Bake 20 minutes, or until meatballs are nicely browned. Transfer meatballs to crock pot.
**SKIP ALL OF THE ABOVE IF YOU USE THE FROZEN MEATBALLS.

Mix remaining 1 cup ketchup, brown sugar, tomato paste, soy sauce, and vinegar in a medium bowl.

Pour over meatballs.

Cover and cook on LOW 4 to 5 hours.

Cream Cheese Sausage Balls

These were also an appetizer at my son's birthday party! I thought that I would add all of the things that I made for his party because they are super easy and quick to make for anyone looking for quick and easy party food.  These are a little bit more brown than I would like. I left them for my husband to take out of the oven while I was in the shower.  I probably should have waited till they were done so I could have kept a better eye on them! LOL.  These were very delicious and what makes them so delicious is the cream cheese! They were YUMMY! A must try!


Ingredients:
1 lb sausage, uncooked
8 oz cream cheese, softened
1 1/4 cups Bisquick
4 oz cheddar cheese, shredded

Directions:

Preheat oven to 400 degrees

Mix all ingredients until well combined. (I use my mixer with the dough hook attachment)

Roll into 1-inch balls.

Bake for 20-25 minutes, or until brown.

Cordon Bleu Appetizers

I made these yummy appetizers for my son's birthday party.  They were delicious and soooo simple to make!

Ingredients

4 ounces cream cheese, softened
1 tsp Dijon mustard
1 cup (4 ounces) shredded Swiss cheese
3/4 cup diced fully cooked ham
1/2 cup minced chives, divided
18-24 pieces of rye cocktail bread (Pepperidge Farm)
Directions:
In a small bowl, beat cream cheese and mustard until smooth.

Stir in the Swiss cheese, ham and 1/4 cup chives.

Spread 1 tablespoon mixture over each bread slice; place on an ungreased baking sheet.

Bake at 350 degrees for 12-15 minutes or until lightly browned. Sprinkle with remaining chives.

Pepperoni Pizza Puffs

I made these yummy little pizza puffs the other night and they were a huge hit! We will definitely be having these again soon!



Ingredients:

3/4 cup flour

3/4 tsp baking powder

1 TBSP Italian seasoning

pinch of salt

pinch of red pepper flakes

3/4 cup whole milk

1 egg, lightly beaten

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 cup cubed pepperoni

1/2 cup store-bought pizza sauce


Directions:

Preheat the oven to 375 degrees.

Grease a 24-cup mini-muffin pan.

In a large bowl, whisk together the flour, baking powder, Italian seasoning, salt and red pepper flakes. 

Whisk in the milk and egg.

Stir in the mozzarella, Parmesan and pepperoni; let stand for 10 minutes.

Stir the batter and divide among the mini-muffin cups.

Bake until puffed and golden, 20 to 25 minutes.

Meanwhile, microwave the pizza sauce until warmed through.

Serve the puffs with the pizza sauce for dipping.
