Steak Marinade Recipe

This marinade was amazing. It doesn't look that appetizing but trust me when I say it was quite possibly the BEST steaks I have ever had!!  They were fabulous. This marinade is perfect and made the meat so flavorful.  I used sirloins from the cow we had butchered. They were AMAZING! 
Ingredients:

1/3 cup soy sauce
1/2 cup olive oil
1/3 cup  lemon juice ( I did not have lemon juice so I used lime juice and it works as well!)
1/4 cup Worcestershire sauce
1 1/2 TBSP garlic powder
3 TBSP dried basil
1 1/2 TBSP dried parsley flakes
1 tsp ground white pepper
1 tsp dried minced garlic

Directions:

Place the soy sauce, olive oil, lemon juice, Worcestershire sauce, garlic powder, basil, parsley, pepper and garlic all in a mixing bowl and mix well.  The original recipe called to put it all in a blender but I did not and I really do not see the need it in.             
Pour marinade over desired type of meat. Cover, and refrigerate for up to 8 hours. Cook meat as desired.

Rotel Chicken Spaghetti

Oh my goodness!! This Spaghetti was delicious! It will definitely be a regular in our house! It was also so easy to put together. A must try!

 
Ingredients:
3-4 large boneless chicken breasts
1 can (10 3/4 ounce) Cream of Chicken Soup
1 can (10 ounce) Rotel Diced Tomatoes with Green Chilies
1/2 tsp garlic powder
1/2 tsp onion powder
1 TBSP Margarine or butter
8  ounces Velveeta cheese, cubed
8 ounces spaghetti, cooked and drained


Directions:
Cut up chicken into bite size pieces.


In a large skillet melt butter or margarine.


Add cubed chicken, garlic & onion.


Cook over medium-high heat until chicken is no longer pink and no liquid is left in skillet.


Stir in soup, cheese and Rotel Tomatoes.


Reduce heat to low, and cook until the cheese melts, stirring constantly.


Stir in spaghetti and pour into a lightly greased 2 quart casserole dish.


Bake at 350 degrees for 30 minutes or until heated through.

Chocolate Chip Cookie Dough Truffles

OH MY GOODNESS! These are AMAZING!! If you love to eat cookie dough you will absolutely LOVE these!!

Ingredients:

2 1/2 cups all purpose flour
1 tsp salt
1/4 tsp baking soda
1 cup (2 sticks) butter or margarine, room temperature
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 tsp vanilla
1/3 cup milk or soy milk
1 cup mini semi-sweet chocolate chips
14 oz chocolate candy coating

Directions:

Beat butter and sugars and in large bowl with electric mixer on medium speed until light and fluffy.

Add milk and vanilla.
Stir in flour, baking soda and salt and mix on low speed (or by hand) until incorporated.

Stir in chocolate chips.

Cover and chill dough for 1 hour.
When dough is firm enough to handle form dough into 1" balls and arrange on a baking sheet lined with waxed paper.

Place sheets in freezer and let chill for at least 30 minutes.

Melt chocolate candy coating in a double boiler or in microwave according to package directions.

Using forks or a dipping tool, dip cookie balls into candy coating to cover.

Tap fork on side of pan to remove any excess coating, and return to waxed paper-lined baking sheets.

Chill until set.

Store, chilled, in an airtight container for up to 1 week.

Copycat Chili's Salsa

I found this recipe on Pinterest and decided to make it along with several other appetizers for Super Bowl Sunday! It was the first time I ever made my own salsa and I must say it turned out pretty good!

Ingredients:
2 cans (14.5 oz each) whole tomatoes, drained
1 small (4 oz) can diced or whole jalapenos (not pickled)--about 4-5 jalapenos (or less if you don't like a lot of spice)
1/4 c. yellow onion, cut into quarters (you can also use dried minced onion)
1 tsp. garlic salt
1/2 to 1 tsp. salt (depending on how much you prefer)
1 tsp. cumin
1/2 tsp. sugar
1 tsp. lime juice


Directions:

Place all of the ingredients together into a food processor or blender and puree until smooth. Serve with tortilla chips.

I'M BACK!!!

Well I'm Back!! I have not posted in quite a while because I have not been cooking all that much but I have a good reason! We found out we are expecting Baby #2 on January 19 and as soon as the 7th week hit I have been so sick that I could not stand to cook.  I was able to cook every once in a while when I had a pretty good day but for the most part I have been out of commission.  But I think that I am finally to the point in my pregnancy that I am *cross your fingers* over the sickness.  I still have my moments of nauseousness but it is NOTHING like it was in the beginning.  So I have a few recipes to post and I will try and post more often from now on.
