Zesty BBQ Chicken

This BBQ Chicken was the best I have EVER had!! Just throw it all in the crock pot, let it cook and dinner is done!  This will be a regular in our house!

Ingredients:

6 frozen skinless, boneless chicken breast halves
1 (16-18 ounce) bottle barbecue sauce ( I used Bull's Eye Original.  I used almost a whole bottle.  It really depends on how much chicken you use and how saucy you want it)
1/2 cup Italian salad dressing
1/4 cup brown sugar
2 tablespoons Worcestershire sauce

Directions:

Place chicken in a slow cooker.

In a bowl, mix the barbecue sauce, Italian salad dressing, brown sugar, and Worcestershire sauce.

Pour over the chicken.

Cover, and cook 3 to 4 hours on High or 6 to 8 hours on Low.

Bang Bang Chicken


If you are familiar with Bonefish then you know all about Bang Bang Shrimp.  Well we love it so much we make it here at home quite a bit.  It is so addicting!   The recipe for Bang Bang Shrimp was posted back in June 2011.  Well I decided to try Bang Bang Chicken and let's just say that it did not disappoint!! It was also a success and just as good as the shrimp! 

Ingredients:

5 chicken breasts, cubed
For the sauce:
1/2 cup mayo
5 tsp Sriracha sauce
1 tsp granulated sugar
1 tsp rice vinegar
For the egg mixture:
1 egg, beaten
1/2 cup milk
For the breading:
1/2 cup all purpose flour
1/2 cup Panko breadcrumbs
1 tsp salt
1/2 tsp ground pepper
1/4 tsp garlic powder
1/4 tsp dried basil

Directions:

Prepare a plate lined with paper towels for the chicken after it’s done cooking in the oil. Set aside.

Combine all the ingredients for the sauce and set aside.

In a small, shallow dish, combine the egg and milk. Set aside.

In another shallow dish, combine the ingredients for the breading. Set aside.

Bread the chicken cubes by first coating it in the bread mixture then the egg then back in the breading.

Put the coated chicken cubes on a plate.

Continue until all the chicken have been breaded.

Pop the plate of chicken in the fridge for about 20 minutes.  This will help the breading stick to the chicken.  

In a large skillet, add a thin layer of vegetable oil and place over medium to high heat.

Once the oil is glistening, add in the chicken (I did it in 2-3 batches so you don’t overcrowd the pan) and cook the chicken until it’s cooked through & the breading is nice and crispy brown.

Once the first batch is done, put the cooked chicken on the prepared plate with the paper towel.

Continue with the second batch and once that’s cooked, add that to the prepared plate.

In a large bowl, put in your cooked chicken and pour the sauce all over.

 Toss well to coat every bite.

I place chicken on a plate of lettuce and serve!

Chicken Cordon Bleu Pasta



OH MY GOODNESS!! This was delicious!! This was a Pinterest inspired recipe and it was a huge hit!! It also made lots of leftovers and they were even better the next day! It was such an easy recipe and it is a must try in my opinion!

Ingredients:
 
1 lb. Pasta (I used penne)
1 1/2 cup Chicken Breasts, cooked and cubed (I used Tyson Grilled and Ready Cubed chicken)

1 1/4 cup Ham, cooked and cubed ( I used Perdue Farms diced fully cooked chicken)
1/4 tsp Garlic
Just a dash of Roasted Red Pepper Flakes
1 1/2 cups Milk
8 oz. Cream Cheese (softened)
2 TBSP Minced Onion
2 1/2 cups Mozzarella cheese, shredded
Salt
Pepper

1 cup Italian Style Panko Crumbs
1/2 cup butter, melted

Directions:

Cook Chicken until heated thoroughly.  Toss with garlic and a dash of Red Pepper Flakes.

Heat ham in separate skillet.
Bring a large pot of water to a boil over med-high heat.

Salt it and add the pasta; cook until tender.

Drain and return to the pot. Add in the chicken and ham and toss to combine.

In a medium saucepan, combine the milk, cream cheese and minced onion over low-medium heat.


Cook, stirring frequently, until it becomes a smooth texture (about 5 minutes).
Stir into the pasta mixture.

Stir in the Swiss cheese and season with salt and pepper to taste.

Transfer pasta to a baking dish and top with Panko crumbs.


Pour melted butter over crumbs and broil until browned  (about 4 minutes)

Easy Peanut Butter Fudge

I had to share this Peanut Butter Fudge Recipe!  This has to be the easiest Peanut Butter Fudge EVER! It has the perfect flavor as well.  I love fudge but I hate when it is so rich that you cannot hardly eat it.  I thought that this fudge was just right!


Ingredients:

2 cups of sugar
1/2 cup of milk
1 tsp vanilla
3/4 cup of peanut butter



Directions:

Line a 9x9 pan with aluminium foil.

Bring sugar and milk to a boil. 

Boil two and half minutes.

Remove from heat and stir in Peanut Butter and Vanilla.

Pour mixture into prepared pan and let it sit until it hardens.

Italian Meatball Sandwich


My husband LOVED this sandwich!! It was such an easy meal to put together and with little mess!! Also the meatball are baked and not fried! The meatballs are delicious even to eat all by themselves!


Ingredients:


1 pound hamburger
2 eggs, beaten with 1/2 cup milk
1/2 cup grated Parmesan
1 cup Italian bread crumbs

1 small onion, minced or grated (1/2 a large onion)
1/2 TBSP minced garlic
1/2 tsp oregano
1 tsp salt
freshly ground pepper to taste
1 tsp parsley or basil

1 jar of your favorite spaghetti sauce
Mozzarella Cheese
Italian Sub Rolls or your favorite bread


 

Directions:

Mix all ingredients with hands.

Form into golf ball sized meatballs.

Bake at 350 degrees for 30 minutes.

While the meatballs are baking prepare your spaghetti sauce. Heat thoroughly. 

Place meatballs on bread and top with sauce and cheese.
